Pan Fried Gnocchi with Salmon |
Preparation:
- Add 3 tbsp. of the oil to a large frying pan, heated to medium heat.
- Pan fry the gnocchi in 2 batches over medium heat for 4-5 minutes, or until golden brown and tender.
- Cover and keep warm.
- Heat the remaining oil in a medium sauce pan.
- Cook the garlic, onions and mushrooms for 5-6 minutes, or until cooked.
- Add the salmon, balsamic vinegar and parsley.
- Toss gently to combine and heat 1-2 minutes or until warmed through.
- Plate the gnocchi and top with the salmon mixture.
- Season with black pepper and garnish with extra parsley.
- Serve immediately topped with sour cream.
