BBQ Pasta with Chicken

 

Ingredients:

10 oz. Turri's Mostaccioli, uncooked
1 tbsp. vegetable oil
4 oz. of chicken temders, cut into strips
1/4 cup green bell peppers, diced
1/4 cup red onion, julienned
1 tsp. chopped garlic
1/2 cup tomato sauce
1/4 cup bbq sauce
1/2 cup grated provolone cheese
1/4 cup grated asiago cheese
2 tbsp. diced green onions
2 tbsp. chopped cilantro

Preparation:
  1. Prepare Turri's Mostaccioli according to directions.
  2. Heat oil in a large skillet over medium heat, add chicken and saute until browned on all sides, about 3 minutes.
  3. Add bell pepper, onion, and garlic and cook until onion is soft, about 1 minute.
  4. Add tomato sauce and barbecue sauce and heat just to boiling.
  5. Reduce heat to low.
  6. Drain pasta and return to pot.
  7. Add chicken mixture and cheese to the pot.
  8. Stir over low heat until pasta is coated with sauce.
  9. Transfer pasta to a serving bowl and top with green onions and cilantro.
